Physicians writing prescriptions for farmers markets instead of pharmaceuticals is a burgeoning new trend that aims to combat unhealthy eating and brings assistance to the indigent population.
In this part of the activity, you will learn about farmers market produce that contains healthful nutrients.
Match each type of produce to the healthful nutrient it provides.
The Senior Farmer’s Market Nutrition Program: Program that is operated by the USDA Food and Nutrition Service which awards grants throughout the U.S. The recipients provide coupons to low-income senior citizens. The coupon can be used as cash to obtain food at farmer’s markets, roadside stands, and community-supported agriculture (CSA) programs.
In this part of the activity, you will help a pair of senior citizens decide how to spend their coupons.
Mel and Mable are riding in the countryside and decide to stop off at a farm stand that sells fresh herbs so that they can use their coupons. They plan to make several pots of soup and freeze the left-overs so they can have multiple meals. Help them match the herb with its nutritional profile.
Patrons don't often realize what goes on behind the scenes at farmer's markets in terms of farming practices. High input and low input are descriptors for the ways in which farming techniques are carried out. High-input farms rely heavily on excess water usage and pesticide. Low-input farms use natural processes wherever possible instead of chemicals. Identify each farming practice as high input or low input.
