Lactose is broken down into two sugars and modified into allolactose
The metabolism of lactose. (a) The enzyme β-galactosidase catalyzes a reaction in which water is added to the β-galactoside linkage to break lactose into separate molecules of glucose and galactose. (b) The enzyme also modifies a smaller proportion of lactose into allolactose, which acts as an inducer of the lac operon.
