Compounds that you smell are sensed by receptor sites in your nose. Receptor sites are made of large molecules called proteins. The protein molecules consist of amino acid molecules that are linked together to form long chains. There are a great variety of protein molecules, made of various combinations of different amino acids. Protein molecules are essential to nearly all body functions, including the sense of smell.
