Figure 11.2 Soaps are the sodium and potassium salts of long chain fatty acids. They are derived from the treatment of triacylglycerols with a strong base, a process called saponification. Common sources of triacylglycerols are the animal lipids lard (from hogs) or tallow (from beef or sheep).
